Guidelines, Rules and Suggestions
Date and location: The Chili Cook-off, Salsa Sampler and Frijoles Fest will be conducted Saturday, August 3 at IMAC Center /Abelardo L. Rodriguez Park, at the corner of Rene Ortiz C. and Mar Adriatico. (One block west of Boulevard Benito Juarez and Banamex Bank)
Fees: The public will make a donation to FOL to enter this fundraising event. All chili , frijoles and/or salsa provided to the public will be provided by the participant without compensation as a donation to FOL. Thanks! Individual participants shall make no additional charges or accept additional compensation. All remuneration, if any, will be accepted by FOL as donations.
Set up and hours: Your table/space will be available for set-up at 10:30 AM. You must claim your space and begin set-up not later than 11 AM. The event officially kicks-off and you should be ready to serve at 12 Noon. Please plan on being present in your space until 4 PM, the conclusion of the event.
We recommend two persons per table for proper presentation, and dealing with tasters.
Tables will be provided. Please plan on bringing everything else you will need, including clean-up. Remember that you will be judged on “presentation” which will include how your table looks, how you present yourself and interact with the public, what condiments or extras you provide, etc.
FOL will provide the tasting cups, spoons, napkins, tickets for voting and a “ballot box.”
Participants must provide their own serving utensils, including extras in the event of contamination; and water, towels, etc., for clean-up and sanitation. Participants are responsible for maintaining sanitary conditions. Please keep additional supplies properly stored.
Electricity will be available for a limited number of entrants. You can use a generator if placed far enough away from the table so as to not present a noise problem. Camp stoves or other safe means of keeping the food at 140 degrees or hotter must be provided by participants. Safety is a consideration and if your table is considered unsafe, you can be disqualified.
If you cannot locate a power source or stove, inquire with the organizers. We may have accepted some donated equipment.
No smoking. The only food or beverage allowed in the booth is that which is part of your entry and presentation. Please do not leave open flames or uncovered food unattended.
Chili and Frijole Preparation: All chili and frijoles must be prepared before you arrive on site. Foods must be preserved, or cooled for transport, and served hot. Judging and public sampling will commence promptly at 12 Noon. Participants may be asked to taste their own food at any time.
You may use any ingredients you wish, however a list disclosing the ingredients to the judges and public must be available for every food item offered for consumption.
Chili categories for judging will be: vegetarian, meat with beans, meat no beans, beans with no meat. Please specify if your chili is considered “mild,” “hot,” or “very hot.” Please provide a description of the style of your frijoles, and indicate the geographic origin of your recipe if appropriate.
Judging: Judging will be based upon color, aroma, consistency, taste and after-taste. Presentation will also be considered, including cleanliness, table appearance, condiments offered, decorations, costumes or appearance of the cook(s) and accompaniment(s) if any. Frijoles – Mexican, South American or North American – will be judged on the same basis.
FOL will provide celebrity judges who will taste and score your entry. A Chief Judge will be appointed, and all ties or additional considerations which may arise will be decided by the Chief Judge, whose decision is final.
Judges may sample or resample at any time prior to announcing the winners.
People’s Choice Award: This award is by the public. Anyone may purchase voting tickets from FOL for use to “vote” for your entry. There are no rules… this award is for fun and fundraising… ballot box stuffing is permitted.
Salsa: Chili cooks are not obligated to present salsa. Salsa may be presented by one who does not offer chili. Those chili cooks who also present salsa may receive additional judging points for presentation, but all chili will be judged separately, and these presentation points will not necessarily determine the winning selection.
Those offering salsa must provide their own chips. FOL will provide sample plates.
Separate judging, similar to chili judging will take place for salsa and frijole participants, and similar criteria will be used. Awards will be determined both by official judging and People’s Choice, subject to the provisions previously stated.
Final Note: Remember this is a fundraising event for the Rosarito Friends of the Library. Your only compensation for participating is our Award and the satisfaction you have helped the libraries of Rosarito Beach. Photographic images, participant names and descriptions may be used by FOL to promote this and future events, so if you are part of the witness protection program, let us know in advance.
